800 gr of boned steak in one cut,rosemary, garlic, salt, pepper olive oil,a knob of butter, half a glass of wine or cognac, a tea spoon of flour.


Directions: if possible ask the butcher to to tie the meat otherwise use some kitchen string and tie it. Chop garlic and rosemary and sprinkle on the meat, then oil it, add salt , pepper and put it in the fridge to marinade all night long. Put the meat with all its marinade in an oven dish and cook for 40 minutes at 200°. Add the wine 10 minutes before ending the cooking.When ready,pour all the cooking sauce into a non-stick pan, add the flour and the butter and let it melt as to form a cream. Slice the meat and pour the cream on the slices.
